Guess what is this electric drill for?  Our photographer is making a hole in dried bonito (Katsuobushi) for our magazine cover shooting try. This February issue is featuring “Seeking the exquisite food” in Japan. It was really exciting to making it! The orange triangle shape is called Kuchiko, also known as Konoko. This is really rare delicacy made in Noto peninsula. It has been regarded as a delicacy in the old days. The real identity is ……sea cucumber ovaries! One triangle piece needs about 50 sea cucumbers. Ovaries are carefully layered together and dried in the sun. Kuchiko is made by hand only in cold winter. The best way to try Kuchiko is to lightly toast it over a flame. You can taste the flavor of the ocean! Enjoy it with Sake! It is nutty and more you chew the Kuchiko, more you taste the complex Umami(he hidden fifth taste) . It almost tastes like caviar!
